Picnic Favourites

We love a good picnic here at Train Together and we love really good food. Food that tastes great, is good for us and makes us look amazing.

We believe that the trick to healthy eating is knowing exactly what’s in your food. If your fitness goal is to build muscle, you need to be tucking into more protein. If you want to lose weight, cutting back on fat is the best way to fight the flab. If you just want to get healthier, making sure you are getting a balanced diet can do wonders for your body and mind. Our Personal Trainers have put together a summery selection of Picnic Favourites for you to use and enjoy with all of the family. We know we can’t guarantee you’ll get the right weather for a picnic, but all of our recipes are great for lunches and jazzing up your lunchbox. Every recipe has been closely analysed to give you a complete break-down of Carbohydrates, Protein, Fat and Calories. As a special treat this week, we have decided to give you sneak peek and picked out one of our favourite recipes to give to you for free. Satay Chicken – Serves 6

Shopping & Ingredients List:

• 6 skinless Drumsticks
• 6 skinless Thighs
• 1 Lime, zest & juice
• 2 Lemongrass Stalks, chopped
• 5cm Root Ginger, chopped
• 3 Garlic Cloves
• 2 tbsp Peanut Butter
• ½ tsp Ground Cumin
• ½ tsp Turmeric
• 160ml Coconut Cream
• 20g fresh Coriander, chopped
• 2 tsp Olive Oil

Method

  1. Slash deep cuts into the drumsticks & thighs. Place in large non-metallic container.
  2. In a food processor whizz together the lime zest & juice, lemongrass, ginger, garlic, peanut butter, coconut cream & spices to make a marinade. Pour over the chicken pieces. Chill in fridge for at least 3 hours.
  3. Heat oven to 190c (170 fan), 375f, gas mark 5. Line a baking sheet with foil & grease with olive oil. Place chicken on the baking tray & roast for 1 hour. Can be served hot or cold with salad.
